Ingredients
  

  • ¼ cup rice
  • 4 cups milk
  • ¼ teaspoon salt
  • ⅓ cup sugar
  • ½ teaspoon vanilla
  • ½ lemon grated rind

Instructions
 

  • Rinse the rice under cold water until the water runs clear. Drain well.
  • In a baking dish, combine the rinsed rice, milk, sugar, salt, vanilla, and grated lemon rind. Mix well.
  • Bake the pudding in a preheated oven at 250°F (120°C) for 3 hours, stirring three times during the first hour to prevent the rice from settling.
  • Once the pudding is creamy and the rice is tender, remove it from the oven and let it cool slightly before serving.
