Ingredients

  • 1 package 3 oz lemon flavored gelatin
  • 2 cups boiling water
  • 1 tablespoon lemon juice optional
  • 1 large egg white

Instructions

  • In a medium bowl, whisk together the lemon-flavored gelatin and boiling water until the gelatin is completely dissolved. Stir in the lemon juice, if using.
  • Let the gelatin mixture cool and thicken until it reaches a syrupy consistency, about 30 minutes.
  • In a separate bowl, using an electric mixer with clean beaters, beat the egg white on high speed until stiff peaks form.
  • Gently fold the beaten egg white into the chilled gelatin mixture until just combined. Be careful not to overmix, as this can deflate the egg white.
  • Spoon the lemon snow mixture into individual serving dishes or a small mold.
  • Refrigerate for at least 2 hours, or until set.

Notes

Storing your lemon snow
Lemon snow can be stored in an airtight container in the refrigerator for up to 3 days.

  • You can fold in a dollop of whipped cream or a spoonful of crushed fresh fruit into the lemon snow before chilling.

  • For a special touch, garnish the lemon snow with a lemon slice or a sprig of mint before serving.
